The SAIUN series by Kanetsugu is renowned for its understated yet captivating style. The blade's damascus pattern, comprising 32 layers of steel forged over a VG-10 core, is beloved by Japanese knife enthusiasts. The blade is hardened to 61 HRC using a distinctive "sub-zero treatment," rapidly cooling the blade to -70 degrees Celsius during thermal processing, enhancing both its cutting aggressiveness and edge retention.
A rarely seen finishing touch applied in the SAIUN series is the Hamaguri, or "clam shell edge." This feature rounds the blade's profile, reminiscent of sea shells, enhancing the kitchen knife's strength, reducing brittleness, adopting Japanese cutting techniques, and minimizing foods sticking to the blade.
The stunning handle, crafted from black micarta and adorned with two rivets and a striking red ring, merges Western flair with unparalleled ergonomics for exceptional blade control.
