Instructions for use:
To prepare biryani, you will need: meat – 800 g, basmati rice – 650 g, ginger-garlic paste – 3 tbsp. l., 1 medium onion, plain yogurt – 150 g, vegetable oil – ¾ cup, food coloring (yellow) – optionally, biryani spice mix – 50 g, water for cooking the meat (beef, goat meat, lamb) – 2 cups or 1 cup for chicken, water (for rice) – 3 l, salt (for rice) – 1 ½ tbsp. l.
Pour 3 liters of water into a pot and bring it to a boil. Add rice and salt, cook until done and drain the water. In another pot, put the meat, ginger-garlic paste, and spice mixture, and cover with water. Cover the pot with a lid and cook over low heat until the meat becomes tender. Add yogurt to the meat and mix thoroughly. Put half the rice in the pan and pour the meat gravy over it. Place the remaining rice on top of the sauce and sprinkle with yellow food coloring if necessary. Heat oil in a skillet and fry the chopped onion until golden brown. Spread the layered rice and cook over low heat until the rice is fully cooked (approximately 5-10 minutes). Evenly mix the rice and gravy and serve hot with raita.
